Fried Shallots
the KEY flavor element to this dish are fried shallots. It is easy to make your own. These shallots add incredibly flavor to the dish.
Dried Shiitake Mushroom
Dried shiitake mushroom is an ingredient commonly used in Taiwanese cooking. The smell is much stronger then the fresh mushrooms. Because “Lenthionine” from the mushroom is released when the mushrooms are sun-dried. Before cooking just soak them in warm water. It helps to retain the flavor of the mushroom and also softens it faster. And it is import to cook with the mushroom water together so that can make the dish with more flavor.
Ingredients
1/2 pound ground pork
10 dry shiitake mushrooms fine chopped
5 cloves garlic, minced
1 tea spoon ginger, minced
6 shallots, minced
Seasoning
1 tea spoon salt
1 tea spoon five spice powder
2 table spoon rice wine
2 table spoon soy sauce
1/2 cup shiitake mushroom water,
1/2 cup water plus more as needed
Direction
Step 1: Put dried shiitake mushrooms in warm water until soft, then fine chopped. Keep the water for cooking.
Step 2: Heat olive oil in a pot over medium-high heat. Add minced shallots. Stir, until the shallots turn browned, about 6 minutes more. And separate shallots and oil. Keep the oil in the pan.
Step3: Use the oil to stir minced shiitake mushroom until the flavor come out. Add salt, stir. Add minced garlic and ginger. Stir 1-2 minutes.
Step4: Add ground pork with medium-high heat. Stir until the pork turn to white color. Stir for 8-10 minutes. Add five spice powder, Add soy : sauce, water and shiitake mushroom water, rice wine. bring the heat to simmer for 40 minutes. Lid on. And add browned shallots then cook 5 minutes.
